Gluten Free 3-Way Apple Muffins

Ah, a three day weekend.  I love them so much.  Every time we get that one extra day it seems like it makes all the difference.  It makes the weekend feel like you actually have time to relax before you start thinking about going back to work and it makes the work week shorter, so it’s a double win!

Two weeks ago, my boy and I made the first pilgrimage for this year to one of the local apple farms, Skytop Orchard.  The area where we live is one of the highest producers of apples in the U.S. North Carolina ranks 7th in the U.S. for apple production and nearby Henderson County has over 150 orchards.  So we spend a lot of time picking apples every fall.  And lots of apples means lots of apple goodies for us.  

Skytop is one of the farthest orchards from our house, so we don’t visit there more than once per year.  We usually stick to the closer spots for our other trips.  It does boast an amazing view though. Unfortunately such a view comes with a killer hill which looks fun until you start pulling your wagon of apples up it after roasting in the hot sun.  But there are cider donuts at the top (not gluten free), so it is all worth it, I guess! 🙂 

Every time I get a bit of extra time, I plan to bake of course.  This weekend, I had a lot of baking plans.  I had so many ideas that I had to make a list.  We have a ton of apples on hand, so there are plenty of apple ideas on my list.  But by Saturday afternoon, I realized I was out of flour, so all I managed to turn out were these Three Way Apple Muffins (and a recipe for an upcoming but currently secret project I’m working on).  I was too lazy to go to the store all weekend, so it’s a good thing these muffins were yummy enough to keep my tied over until Tuesday.

You may be wondering about the name, Three Way Apple Muffins.  Well, an abundance of apples, brings an abundance of ways to enjoy them!  These muffins are fill with fresh apples, applesauce and apple cider, plus some spices and nuts.  A wonderful breakfast treat for fall (or when you just wish it was fall).

Gluten Free 3-Way Apple Muffins

Gluten Free 3-Way Apple Muffins

  • 1 C GF 1-to-1 Flour
  • 1/2 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 1 tsp Baking Powder
  • 1/4 tsp Salt
  • 2/3 C Sugar
  • 1 Large Egg
  • 3 Tbsp Olive Oil
  • 1 tsp Vanilla
  • 2 Tbsp Maple Syrup
  • 2 Tbsp Apple Cider
  • 1/2 C Applesauce, unsweetened
  • 1 C Fresh Apple, chopped into 1/4" cubes
  • 3/4 C Walnuts, roughly chopped & divided
  • Coarse Sugar, for topping


  1. Preheat oven to 400 degrees. Line 6 muffins cups with paper baking cups.
  2. In a large bowl, combine all dry ingredients, including sugar.
  3. In a second smaller bowl, crack and whisk the egg until frothy. Add the oil, vanilla, maple syrup and apple cider. Whisk together until well combined.
  4. Pour the wet ingredients into the dry. Add the apple sauce, 1/2 C nuts and chopped apples. Fold together 15-20 strokes until just combined.
  5. Scoop batter into muffin cups, filling to the top. Sprinkle the top with reserved 1/4 C walnuts and coarse sugar. Place into preheated oven.
  6. Cook for 2 minutes, then reduce heat to 375. Cook an additional 24-25 minutes until tops spring back when gently poked.
  7. Remove to wire rack to cool.
