The rich flavors of caramel blend perfectly with the warm spices found in apple pie and everyone knows apples and caramel go great together. A little bit of sea salt balances all the sweetness of the pie for a delicious, irresistible dessert. You're going to love this pie topped with a scoop of vanilla ice cream - it will be the hit of your holiday meal!
I've used leaf cutters to make my pie fall themed, but a lattice crust or crumb topping would be amazing too! Make this pie with my flaky pie crust and vegan salted caramel sauce for a gluten free and dairy free dessert that everyone can enjoy.

Ingredient Notes
This recipe uses just a few simple ingredients that can be found at any grocery store.
- Double Pie Crust (not shown) - I use my gluten free pie crust recipe for all of my pies. If you have a favorite pie crust recipe or prefer store bought pie dough that will work fine too. You'll need enough pie dough for a double crust.
- Apples - You will need 4-5 apples for a 9-inch pie and up to 7 apples for a deep dish pie. I like to mix varieties of tart apples and sweet apples, like Granny Smith apples and Golden Delicious.
- Brown Sugar - I've chosen light brown sugar here, but granulated sugar or even coconut sugar would work fine too.
- Cornstarch - A little bit of starch helps to thicken the juices that cook out of the apples during baking. It will set up and keep the filling from being runny.
- Lemon Juice - A little lemon juice helps to keep the apples from browning and also provides a little contrast to all the sweetness.
- Vanilla - Vanilla extract always enhances the flavors of desserts.
- Cinnamon, Allspice & Nutmeg - These are the typical spice flavors you will find in apple pie. You could use apple pie spice in place of the combined spices.
- Salt - A pinch of salt helps the balance the flavors of the pie.
- Salted Caramel Sauce - I use my vegan salted caramel sauce, both inside and on top of the pie. If you're not dairy free, you can use a store bought caramel sauce.
- Egg Wash (optional) - Egg wash is a combination of a beaten egg, water and a pinch of salt. It's brushed over the pie crust before baking and gives it that beautiful deep golden brown appearance. If you're vegan, you can omit the egg wash or use my vegan alternative, listed at the bottom of the recipe card.
- Turbinado Sugar - I always sprinkle my pie crust with a bit of coarse sugar to add a little sparkle and crunch.
See recipe card for full ingredient list and quantities.
Substitutions & Variations
- Not Gluten Free - Use your favorite pie crust recipe in place of my gluten free pie crust.
- Not Dairy Free - use dairy based salted caramel sauce in the same measure.
- Get Nutty - Add in ½ cup of chopped nuts. I think pecans would be delicious in this recipe.
- Fruit Switch - Replace half the apples with pears for a fun variation on this recipe!

How to Make a Salted Caramel Apple Pie
If you're making your pie dough from scratch, you will need to prepare that ahead of time. Roll out the bottom crust and line a 9-inch pie plate. Keep the prepared pie shell in the freezer while you make the filling.
STEP 1: Peel, core and slice the apples. You will want thin slices, about ¼ inch. Place them in a large mixing bowl.
STEP 2: Add the brown sugar, cornstarch, cinnamon, allspice, nutmeg, salt, vanilla and lemon juice to the bowl with the sliced apples. Stir it well to coat the apples.
STEP 3: Place the spiced apple slices in your prepared pie shell. Pour ½ cup of the caramel sauce over the apples.
STEP 4: Add your top pie crust over the caramel apple pie filling. I've used pie leaf cutters for a fall theme, but a lattice crust would also be beautiful.
Brush the top with egg wash and sprinkle with coarse sugar if you're using it. Now you're ready to bake on the lowest rack of the oven.
Expert Tip
Always place your pie pan on a rimmed baking sheet before putting it in the oven. This will help you avoid any messy overflow from dripping to the bottom of the oven.
Storage
Cover leftover pie with aluminum foil or plastic wrap and store it in the refrigerator for up to 4 days.
This pie will also freeze well. Wait until the pie has cooled completely, then wrap it in several layers of plastic wrap and place it in a freezer-safe bag or container. Freeze for up to 3 months. Thaw overnight in the refrigerator before serving.
Pour the remaining caramel sauce on the top of the pie before serving.

Recipe
Salted Caramel Apple Pie
Ingredients
- 1 Double Gluten Free Pie Crust
- 5 Apples mixed varieties
- 2 teaspoon Lemon Juice
- ½ Cup Light Brown Sugar
- 2 Tablespoon Cornstarch
- 1 teaspoon Cinnamon
- ¼ teaspoon Allspice
- ¼ teaspoon Nutmeg
- ¼ teaspoon Salt
- 2 teaspoon Vanilla
- 1 Cup Salted Caramel Sauce divided
- 1 Egg Wash optional (1 large egg + 1 tablespoon water + ⅛ teaspoon Salt)
- Turbinado Sugar optional
Instructions
- Preheat oven to 400 °F (204 °C)
- Roll out your bottom pie crust and line a 9-inch pie pan. Place the pie shell in the freezer while you prepare the filling.1 Double Gluten Free Pie Crust
- Core and slice your apples, making very thin slices (about ¼").5 Apples
- In a large bowl, combine apples, lemon juice, brown sugar, cornstarch, spices, salt and vanilla. Stir well until apples are completely coated.2 teaspoon Lemon Juice, ½ Cup Light Brown Sugar, 2 Tablespoon Cornstarch, 1 teaspoon Cinnamon, ¼ teaspoon Allspice, ¼ teaspoon Nutmeg, ¼ teaspoon Salt, 2 teaspoon Vanilla
- Remove pie shell from freezer. Working with one slice at a time, place apples into the shell. You want to wedge apples into every crevice and keep mounding them up. Your apples will end up being 2-3 inches taller than your pie shell, but it's okay because they will cook down in the oven.
- Pour ½ Cup of salted caramel sauce over the apple filling.1 Cup Salted Caramel Sauce
- Add the top crust and brush with egg wash. Sprinkle with turbinado sugar.1 Egg Wash, Turbinado Sugar
- Place pie on a rimmed baking sheet. Bake on the lowest rack of preheated oven for 60 minutes. The filling should be bubbling, and the crust should be a nice golden-brown color. If the top begins to brown too much during baking, lay a piece of aluminum foil over the top. You do not need to fold it around the sides of the pie dish.
- Remove and cool for at least 4 hours before slicing. Pour remaining ½ cup of salted caramel sauce over the top before serving.
