Ingredients

Saute the aromatics.

Step 1

Add the potatoes, cauliflower, carrots and broth.  Cook until tender.

Step 2

Move half of the cooked vegetables to a large bowl.  Add coconut milk & nutritional yeast. Puree.

Step 3

Add the broccoli to the soup and cook.

Step 4

Pour the pureed vegetables back into the soup.

Step 5

Quick & easy weeknight dinner, with no added gluten, dairy, sugar, soy or corn.
