Fresh Cherry Almond Cake

If you love the flavors of almonds and fresh cherries, this cake recipe is just for you! This cherry almond cake is so moist and easy to make and the best part is it’s gluten free and dairy free!

gluten free 1-to-1 flour

baking powder

sugar

salt

eggs

vegan butter

almond extract

non-dairy milk

sliced almonds

fresh cherries

Simple Ingredients 

Combine the butter and sugar in the bowl of an electric mixer.  Beat on medium speed about 4 minutes until light and fluffy. Add the almond extract and the eggs, beating about 60 seconds between each addition.

With the mixer on low speed, add half the dry ingredients (flour, baking powder and salt) followed by half of the milk. Repeat with the remaining flour and milk.  Stir just until combined. Fold the cherries in with a spatula.

Spread the batter into your prepared cake pan.  It will be thick. Sprinkle with sliced almonds if using and bake.
