Blueberry Buckle  Coffee Cake

This amazing gluten free blueberry buckle is a soft, moist vanilla cake bursting with tons of fresh blueberries and topped off with a sweet, crunchy streusel topping.  It’s a fruit filled coffee cake that’s perfect for breakfast or dessert.  

gluten free 1-to-1 flour

baking powder

vegan butter

salt and sugar

eggs

vanilla

non-dairy milk

fresh blueberries

vegan butter

light brown sugar

sugar

For The Streusel

Simple Ingredients 

Step 1 – Combine the butter and sugar in the bowl of an electric mixer.  Beat until light and fluffy.

Step 2 – Add the vanilla and the eggs.  Beat again.

Step 3 – Combine the flour, baking powder and salt together.  Add about half to the egg mixture and stir on low speed.

Step 4 – Add half of the milk, followed by the remaining flour and milk.  Stir until just combined.

Step 5 – Fold the blueberries in by hand. Step 6 – Spread into a lined pan and top with a sprinkling of blueberries and the streusel topping
