This quick and easy recipe makes just 6 bakery style gluten free blueberry muffins that make a perfect breakfast treat!
Ingredients
Combine gluten free flour, baking powder, sugar, c and salt together in a large mixing bowl. Whisk well and set aside.
Step 1
In a second smaller bowl, whisk the egg until frothy like soap bubbles.
Step 2
Add the oil, vanilla, and dairy free milk to the beaten egg. Whisk together until smooth.
Step 3
Add the wet ingredients to the dry. Fold together with a spatula, about 10 strokes.
Step 4
Add the fresh blueberries and fold together about 5 more times.
Step 5
Portion the blueberry muffin batter into 6 lined muffins cups and top with streusel or coarse sugar. Then bake!
