Crispy on the outside, gooey on the inside and filled with chocolate and walnuts, just like the original yet gluten-free and dairy-free!
Ingredients
Whisk the gluten free flour, cornstarch, baking powder, baking soda and salt in a medium size bowl.
Step 1
Add the vegan butter, brown sugar and white sugar to the bowl of an electric mixer. Beat on medium speed for 5 minutes, until light and fluffy.
Step 2
Add the vanilla, egg and egg yolk to the butter mixture. Beat for another 90 seconds.
Step 3
With the mixer on low speed, slowly add the flour mixture. Stir until just combined.
Step 4
Add the chocolate chips and walnuts to the cookie dough. Stir by hand or mix briefly until they are evenly incorporated.
Step 5
Once the dough is mixed, cover with plastic wrap and refrigerate the dough an hour.
Step 6
Portion into dough balls 4-6 ounces in size and bake!
