Is there anything more summer than a fresh juicy peach?  These muffins are filled with chunks of fresh peaches and topped with a crunchy streusel, just like peach cobbler!

Ingredients

Combine gluten free flour, sugar, baking powder, salt & spices in a large mixing bowl.

Step 1

In a second bowl, whisk the egg until frothy, like soap bubbles.

Step 2

Add the oil, milk and vanilla to the beaten egg and whisk until smooth. 

Step 3

Pour the wet ingredients into the dry and fold together with a spatula.

Step 4

Mash the peaches with a fork. 

Step 5

Fold the mashed peaches and chopped pecans into the muffin batter.

Step 6

Portion the batter into muffin cups and top with streusel topping.  Then bake!

Step 7

The whole family will love this summer breakfast treat!
