If you've never tried pumpkin and banana muffins, you simply have to. The flavor combo is a match made in heaven!
Ingredients
Combine gluten free flour, sugar, baking powder, salt & spices in a large mixing bowl.
Step 1
In a second bowl, whisk the egg until frothy, like soap bubbles.
Step 2
Add the oil, milk and vanilla to the beaten egg and whisk until smooth.

Mash the banana with a fork.
Step 4
Divide the batter into two bowls. Add the banana to one and the pumpkin to the other.

Alternate the two batters in the pan to make a swirl.
