This cozy coffee cake features irresistible pumpkin spice goodness, a dreamy streusel topping, and endless variations to suit your cravings. 


Prepare the streusel topping and refrigerate while you make the cake. 

Step 1

Beat the butter and sugar together until light and fluffy.

Step 2

Add the eggs and vanilla and beat again until well mixed.

Step 3

Add half of the dry ingredients and stir on low speed.

Step 4

Combine the milk and pumpkin puree and add it to the cake batter.

Step 5

Spread half of the cake batter into a pan and top with brown sugar and cinnamon.

Step 6

Add the remaining cake batter, then top with streusel topping and bake!

Step 7

It's the perfect treat for brunch or dessert!
