Chicken Broccoli and Potato Casserole

Instructions
Preheat the oven to 400 degrees. Spray a 9x13 baking dish with non-stick cooking spray.
Place cut potatoes into a pot of cool, salted water. Bring to a boil and cook for 10 minutes until the potatoes are just fork tender.
1 pound Potatoes
Melt 4 tablespoon of butter in a small saucepan over medium heat.
4 Tablespoons Vegan Butter
Add the gluten free flour, whisking well until a thick paste forms. Cook for 2 more minutes, while whisking.
6 Tablespoons Gluten Free 1-to-1 Flour Blend
Continue whisking while slowly adding the milk. A gravy will form.
2 Cups Non Dairy Milk
Add the nutritional yeast, lemon juice, garlic powder, onion powder, salt, black pepper and paprika. Whisk to combine. Remove from heat.
¼ Cup Nutritional Yeast,
1 ½ teaspoon Lemon Juice,
1 ½ teaspoon Garlic Powder,
1 teaspoon Onion Powder,
1 teaspoon Salt,
½ teaspoon Black Pepper,
¼ teaspoon Paprika
Drain the cooked potatoes and place the potatoes in the bottom of the prepared casserole dish. Top with the broccoli florets and the chicken.
3 Cups Broccoli Florets,
4 Cups Cooked Chicken
Pour the cheese sauce over the meat and vegetables.
Sprinkle the parmesan cheese over the casserole.
¼ Cup Vegan Parmesan Cheese
Combine the bread crumbs and melted butter in a small dish. Sprinkle it over the top of the casserole.
6 Tablespoons Gluten Free Bread Crumbs,
2 Tablespoons Vegan Butter
Bake in the preheated oven for 30 minutes.
Notes
STORAGE:
Store leftover casserole in an airtight container in the refrigerator for up to 3 days. Reheat the leftovers to 165 degrees before serving.
