Divide the egg yolks and egg whites into two separate bowls.
2 (100 g) Eggs
Whisk the egg yolks until smooth. Add the milk, melted butter, apple butter and vanilla to the bowl with the egg yolks. Whisk the mixture together until it’s smooth.

Add the egg yolk mixture and the diced apples into the dry ingredients and fold together with a spatula until all of the dry ingredients are incorporated.
1 ½ Cups (219 g) Apples
Add the beaten egg whites to the waffle batter and gently fold them in, taking care not to deflate the bubbles.
Preheat your waffle iron according to the manufacturer’s directions.
Portion the batter into your waffle maker and cook according to your waffle iron’s directions. Mine takes 5-7 minutes per batch.
Notes
KEEP WARM: Place cooked waffles in a single layer on a baking sheet and keep them in a 250F oven (or toaster oven) to keep them warm until ready to serve. STORAGE: Wrap leftover waffles in paper towels and store them in an airtight container in the refrigerator for up to 4 days. Reheat in the toaster or air fryer to make them crispy again.
