    Apple Cinnamon Waffles

    Waffles with a drizzle of maple syrup are one of my favorite breakfast foods. If you agree, then these delicious apple cinnamon waffles are going to be your new favorite recipe.  With warm spices and lots of apple flavor, these golden brown, gluten free waffles are a perfect Fall breakfast, but we love to eat them year round. 

    These light and fluffy waffles will have your whole family rushing to get out of bed in the morning! They store great too for a quick breakfast on busy mornings.

    Ingredient Notes

    These cinnamon apple waffles are made with simple ingredients that can be found at most grocery stores.  It is both gluten free and dairy free as written.

    • Gluten-Free Flour Blend - I used Bob's Red Mill 1-to-1 flour for this recipe.  I have not tested this recipe with any other brands of flour, so if you choose another brand your results may vary. 
    • Apple Butter - Since apple is a very mild flavor, I've used apple butter to add a concentrated cinnamon apples flavor to these waffles.  Don't skip it! 
    • Plant Based Milk - I typically use unsweetened coconut milk or oat milk in my recipes, but your favorite dairy free milk should work fine.  If you're not dairy free, use regular milk in the same measure. 
    • Vegan Butter - Any type of vegan stick butter should work fine.  If you're not dairy free, use unsalted butter in the same measure. 
    • Fresh Apples - Golden Delicious apples are my favorite for their sweet juicy flavor and soft texture, but Granny Smith apples would work great here too!

    Substitutions & Variations

    • Not Dairy Free - use dairy butter and milk in the same measure.
    • Get Nutty - Add in ½ cup of chopped nuts. I think pecans would be delicious in this recipe.
    • No Apples - You could substitute fresh pears for a twist on this recipe.

    How to Make Homemade Apple Cinnamon Waffles

    You will have to dirty a few bowls for these homemade waffles, but I promise it is worth it!

    • STEP 1: Combine the gluten free flour, sugar, baking powder, cinnamon, apple pie spice, and salt in a large bowl and whisk it together. 
    • STEP 2: Divide the egg yolks and egg whites into two bowls.  Whisk the egg yolks until smooth. 
    • STEP 3: Add the milk, melted butter, apple butter, and vanilla extract to the bowl with the egg yolks and whisk together. 
    • STEP 4: Add the egg whites to the bowl of an electric mixer.  Beat them until stiff peaks form.

    • STEP 5: Add the wet ingredients and diced apple to the bowl with the dry ingredients. 
    • STEP 6: Fold everything together until it's well mixed. 
    • STEP 7: Add the whipped egg whites to the bowl with the waffle batter. 
    • STEP 8: Gently fold the egg whites in to the batter taking care not to deflate the egg whites.

    • STEP 9: Let the batter rest while you preheat your waffle iron.  Once the waffle iron is hot, cook according to the manufacturer's direction.

    Expert Tip

    Place cooked waffles in a single layer on a baking sheet and keep them in a 250F oven (or toaster oven) to keep them warm until ready to serve.

    Storage

    Wrap leftover waffles with paper towels and store them in an airtight container in the refrigerator for up to 4 days.  

    Reheat in a toaster oven or air fryer to make them crispy again.

    Equipment

    • Waffle Maker

    Ingredients

    • 2 Cups Gluten Free 1-to-1 Flour Blend I use Bob's Red Mill
    • 3 Tablespoons Sugar
    • 1 Tablespoon Baking Powder
    • 1 teaspoon Cinnamon
    • ¾ teaspoon Salt
    • ½ teaspoon Apple Pie Spice
    • 2 Eggs divided
    • 1 ¼ Cups Non Dairy Milk
    • ½ Cup Vegan Butter melted
    • ¼ Cup Apple Butter
    • 1 teaspoon Vanilla
    • 1 ½ Cups Apples peeled & diced
    US Customary - Metric

    Instructions

    • Combine the gluten free flour, sugar, baking powder, cinnamon, salt and apple pie spice in a large mixing bowl. Whisk together to mix well.
      2 Cups Gluten Free 1-to-1 Flour Blend, 3 Tablespoons Sugar, 1 Tablespoon Baking Powder, 1 teaspoon Cinnamon, ¾ teaspoon Salt, ½ teaspoon Apple Pie Spice
    • Divide the egg yolks and egg whites into two separate bowls.
      2 Eggs
    • Whisk the egg yolks until smooth. Add the milk, melted butter, apple butter and vanilla to the bowl with the egg yolks. Whisk the mixture together until it's smooth.
      1 ¼ Cups Non Dairy Milk, ½ Cup Vegan Butter, ¼ Cup Apple Butter, 1 teaspoon Vanilla
    • Whisk the egg whites until they form stiff peaks, using either an electric mixer or whisk.
    • Add the egg yolk mixture and the diced apples into the dry ingredients and fold together with a spatula until all of the dry ingredients are incorporated.
      1 ½ Cups Apples
    • Add the beaten egg whites to the waffle batter and gently fold them in, taking care not to deflate the bubbles.
    • Preheat your waffle iron according to the manufacturer's directions.
    • Portion the batter into your waffle maker and cook according to your waffle iron's directions. Mine takes 5-7 minutes per batch.

    Notes

    KEEP WARM: Place cooked waffles in a single layer on a baking sheet and keep them in a 250F oven (or toaster oven) to keep them warm until ready to serve.
