This pecan pie brownies recipe is the perfect way to upgrade a box brownie mix for Thanksgiving. This sweet and crunchy pecan topping tastes just like pecan pie.
Preheat the oven to 350 °F (177 °C). Line a 9-inch square baking pan with parchment paper and set aside.
Prepare the brownies as directed and pour the brownie batter into the baking pan.
1 batch Gluten Free Brownies
Bake in the preheated oven for 25 minutes, they will not be completely baked.
While the brownies are baking, prepare the pecan topping.
Add the brown sugar, corn syrup, butter, vanilla and salt to a saucepan over medium heat. Stir together and cook until bubbling rapidly. Allow it to bubble for 2 minutes.
¾ Cup (160 g) Light Brown Sugar, 6 Tablespoons (126 g) Corn Syrup, ¼ Cup (56 g) Vegan Butter, 1 teaspoon Vanilla, ½ teaspoon Salt
Remove the pan from heat and stir in the pecan pieces. Allow the mixture to sit until the brownies are ready.
2 ¼ Cups (200 g) Pecans
After the 25 minutes has elapsed, remove the brownies from the oven and dollop the top with the pecan mixture. You won't be able to spread it, but it's okay if there are some gaps because it will melt and join together during baking.
Return the brownie pan to the oven and bake from another 25-30 minutes until the pecan topping is set (and looks like pecan pie) and the brownies give a few moist crumbs when checked at the center with a toothpick.
Remove from the oven and cool in the pan at least 2 hours before serving.
