Ingredient Notes
Just a few simple naturally gluten free ingredients go into this pico de gallo and it's so easy to make!
- Fresh Pineapple - I don't know about you, but I cannot get enough fresh pineapple. If it's out of season where you live, you can use the canned type but make sure to drain it well.
- Fresh Mango - This is the co-star of this sweet, juicy pico de gallo. Most grocery stores will carry mango in the produce department.
- Red Bell Pepper - Bell pepper offers a nice compliment to the sweetness of the fruit.
- Jalapeno - We love spicy things at my house, so we're all about adding hot peppers. You can customize this to your liking - if you like it hotter add more peppers or even add something hotter like a habanero.
- Red Onion - The tangy taste of fresh onion breaks up some of the sweetness to add a little complexity to the flavors.
- Lime Juice - Citrus juice really brings this whole dish together. I love to use fresh squeezed since it has a lot more flavor than the bottle stuff.
- Salt & Pepper - Season to your liking!
- Cilantro - Fresh herbs really round out the flavors of this dish. I know some people hate cilantro, if that's you feel free to skip it.

How to pick the best mango & pineapple
- For mangoes, you want to look for the skin color to be yellow to red. There should be a little give if you gently press the flesh but you don't want it to be too soft. You should also notice a sweet smell.
- For pineapple, look for golden yellow color on the outside with no black spots. You should also be able to smell the sweetness of the pineapple through the skin. Avoid dark green pineapples which will be firm and less juicy.

Pineapple Mango Pico De Gallo
Ingredients
- 2 Cups Pineapple diced
- 1 Mango diced
- 1 Red Bell Pepper seeded and diced
- 1 Jalapeño seeded and diced
- ½ Cup Red Onion diced
- 1 Lime juiced
- ¼ teaspoon Kosher Salt
- ¼ teaspoon Black Pepper
- 2 Tablespoons Fresh Cilantro chopped
Instructions
- Tip: If you want to use the pineapple rind as a serving dish for the salsa, do not peel the pineapple. Instead, follow the directions in the notes below to remove the pineapple flesh but leave the rind intact.
