This pie has summer written all over it.  A delicious filling made of fresh berries and wrapped in flaky gluten free pie crust!


Combine strawberries, blueberries, sugar, lemon zest, salt and vanilla  in a saucepan over medium heat.

Step 1

Cook until the berries begin to release their juices.

Step 2

Add the cornstarch and stir in until dissolved.  Continue to cook for 3 more minutes. 

Step 3

Cool the thickened pie filling for 30 minutes, then pour into your crust.

Step 4

Decorate the top with a second pie crust. 

Step 5

Enjoy with a scoop of ice cream!
