Ingredient Notes
This easy recipe uses just a few simple ingredients which are available at any grocery store.
- Baby Potatoes - Baby potatoes may also be known as new potatoes. Small baby potatoes have a thin skin which makes them very tender once cooked. I like to use baby Dutch yellow potatoes, but red potatoes or blue potatoes will also work fine. My store sells these bags of whole baby potatoes, which need to be cut into smaller pieces to cook evenly.
- Olive Oil - I use extra light olive oil for all of my cooking and baking, but any light flavored cooking oil will work fine. If you want to use a little less oil, you could opt for olive oil spray instead. Just ensure whatever you use is rated for temperatures of 375F or you will end up with some smoke.
- Salt, Black Pepper, Paprika, Red Pepper Flakes, and Garlic Powder - This combination of seasonings provides just the right level of heat with a punch of flavor. Since these are all really common spices, you will probably have them in your spice drawer. Feel free to mix things up with your favorite seasonings.
- Fresh Parsley - This is the finishing touch for presentation. You might want to skip it for a family meal, but if you're hosting a dinner give these potatoes a little extra pizazz.

How to Make Crispy Air Fryer Baby Potatoes
This fantastic side dish is so simple to make. The hands on time is less than 5 minutes and only 18 minutes of cook time. So it's a perfect side dish when you're rushing to get dinner on the table.
STEP 1: Combine the cut potatoes, olive oil and spices in a large bowl. Stir the potatoes until they're well coated.
STEP 2: Spread the well-seasoned potatoes in a single layer in the air fryer basket and cook until fork tender.
Expert Tip
The potatoes need to be roasted in a single layer to turn out crispy. If you have a small air fryer, you will need to cook them in batches.
Storage
Store leftover potatoes in an airtight container in the refrigerator for up to 4 days. Reheat using a microwave or to make them crispy, reheat in the air fryer.
