    Growing up my mom made chicken almost every night for dinner. I never understood why we had to eat so much chicken until I grew up and had to think of dinner ideas every single night...forever, LOL. Well, this collection of gluten free & dairy free chicken recipes is here to rescue you from your humdrum dinner rotation.

    What are some good dairy substitutions for cooking?

    When cooking gluten free and dairy free, I have been able to convert a lot of my old recipes using substitutions. It's a lot of trial and error to find the products you like best, but here are the products that work for me:

    • Milk - I use unsweetened coconut milk (the type in the box) for cooking and baking. For drinking, we use gluten free oat milk (typically Oatly brand).
    • Cream - I prefer the Silk dairy free cream. Country Crock also makes a dairy free cream that works great. If you can't find either, you can use full-fat canned coconut milk, but it will add a little bit of coconut flavor to your dish.
    • Butter - I usually use vegan butter, like Country Crock or Miyokos. In some recipes, it will also work to substitute olive oil, coconut oil or even shortening.
    • Sour Cream - I prefer Forager brand of vegan sour cream. My second favorites are Follow Your Heart brand or VioLife brand. Depending on which stores you're shopping at you might find this item in the dairy or the produce sections.
    • Cream Cheese - Miyokos is for sure my favorite brand for cream cheese. It has the best consistency (not watery) and a strong cream cheese flavor.
    • Cheese - For parmesan cheese, I love the Violife cheese wedge that you can grate yourself. It melts just like real cheese. For all other cheeses, I typically bounce around from brand to brand. I haven't found one I really love, so I use them sparingly. When possible I will opt for nutritional yeast to add a cheesy flavor instead of using vegan cheese.

    Sometimes there is confusion around eggs and mayonnaise - these are both dairy free!
