    When the weather starts to shift into Fall, the first thing I want to do is visit the local apple farm to pick apples. If the large number of gluten-free apple desserts I have on my site is indication - apples beat pumpkins any day of the week (as far as I'm concerned).

    Thankfully, you don't have to choose! There are plenty of Fall days to enjoy both apples and pumpkins, plus pears, pecans, and chai too.     What are the best apples for baking?

    Although we regularly see around 20 apple varieties available commercially, there are over 10,000 varieties of apples (some say maybe as many as 30,000 varieties). The reason for this is an apple tree grown from a seed will produce a completely different apple than the fruit the seed came out of. Isn't that wild? In order to keep a variety pure, every single apple tree must be grown from a graft rather than a seed.

    While you're probably used to seeing names like Granny Smith and Gala at the grocery store, if you visit an apple orchard you may find more exotic varieties like Ambrosia or Blondies. In fact, a man named Tom Brown spent years cataloguing over 1,200 varieties of apples so they wouldn't be lost to time.

    Because some apples are best suited to baking, while others are best suited to things like making applesauce or cider, it's important to consider which apples you want to use for your apple recipe. Here's a handy chart to get you started with the most common apples available.
